February 23, 2026
Ingredients
- •2 cups mixed root vegetables (like potatoes, carrots, parsnips), peeled and diced into 1-inch cubes
- •1 tablespoon olive oil
- •1 medium onion, chopped
- •2 cloves garlic, minced
- •5 oz fresh spinach (about 5 cups loosely packed)
- •1 can (15 oz) chickpeas, rinsed and drained
- •1/2 cup vegetable broth or milk
- •3 large eggs
- •1/4 cup grated Parmesan cheese (optional, or other hard cheese)
- •2 tablespoons fresh mixed herbs (like parsley, chives, dill), chopped
- •Salt and black pepper to taste
Instructions
- 1Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish.
- 2Spread the diced root vegetables on a baking sheet, drizzle with a little olive oil, season with salt and pepper, and roast for 20-25 minutes until tender-crisp.
- 3While the vegetables roast, heat the remaining olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- 4Stir in the minced garlic and cook for another minute until fragrant. Add the fresh spinach and cook until wilted, then mix in the rinsed chickpeas. Season with salt and pepper.
- 5In a separate bowl, whisk together the eggs, vegetable broth (or milk), grated Parmesan (if using), and chopped fresh herbs. Season this mixture lightly with salt and pepper.
- 6Once the roasted root vegetables are ready, combine them in the baking dish with the spinach and chickpea mixture. Spread everything evenly.
- 7Pour the whisked egg mixture over the vegetables and chickpeas in the baking dish, making sure it distributes somewhat evenly.
- 8Bake for another 20-25 minutes, or until the egg mixture is set and lightly golden brown on top. Let it cool for a few minutes before serving.
Fun Fact
